I want to send the audio from my FCP project to a sound guy for sweetening. It is about 250MB, so would take over an hour to send with something like "SendIt".

Using just regular DATA compression (e.g. Stuffit, Zip etc.) would/ could probably produce even smaller results and you obviously don?t get any degradation

The only way to rid yourself of QT 7 is a complete re-install. I just went through this whole process about 5 months ago after i stalled QT 7.5 on my FCP 4.5.
