Here are a few reasons:
When I need to do a quick DVD burn, I can offload that to a Mini and keep working. If the Mini is running a scope as well, it adds value to the purchase. Using a KVM switch with the Mini in the edit room (sitting under a monitor) allows the Mac Pro and the hard drive array to be located elsewhere. Client comes in with a CD or a DVD to add music and pictures to your edit? Just slide it into the Mini and copy it through your LAN to storage and you are all set.
I have been asked a number of times by clients if the Mini was running the Final Cut Studio application. I suppose it could, but they'd be sitting in the edit room for a long time.
A software scope using a Mini would be really cool. One would need hardware to convert SDI to Firewire...
